Behind the scenes
Behind the color
No two harvests look exactly alike. Honey's color comes from the flowers the bees visit, and what's blooming changes through the season. Spring honey tends to be lighter and milder. Honey from late summer and fall is often deeper amber to nearly brown, with a richer, bolder flavor. The jar you take home reflects the season it was harvested.

Good to know
Color depends on which flowers were blooming when the bees made it. Later-season honey is usually darker and richer.
It's never heated, and it's only strained through a mesh to remove wax, so the natural pollen stays in.
Crystallization is natural in raw honey and is a sign it hasn't been heat-processed. Set the jar in warm (not hot) water to bring it back to liquid.
At room temperature, tightly sealed. Refrigerating speeds up crystallization.
Many people believe local honey helps with seasonal allergies, but scientific evidence is limited, and most allergy-causing pollen comes from grasses, trees, and ragweed rather than the flowers bees visit. We sell our honey for its flavor and quality, not as a remedy.
No. Honey, raw or processed, should not be given to infants under 12 months old.
